Born of a restaurateur father and a mother who was a cooking diva, he came by his intense love of food naturally. “Cooking is a joy,” he says and a craft he learned in Morocco and Europe. “It’s a part of life. There needs to be the right tone and balance in every plate.” Like fine painters, Sam and his team see food fusion as a work of art. “We put all five senses on one plate, have all the ingredients fuse into one exquisite taste.
